Pineapple Upside Down Cupcakes

There’s a parenthetical “Bitches!” that, without saying,  goes after the title.

 

Except I said it.  Cause they are that awesome and it needs to be said.

 

My mom first made a batch a few months back and they turned out quite well.

 

Or at least well enough that the mere picture of them spawned a request to ship them to Dallas.

 

Then today at lunch I had a craving for them and asked her for the recipe.

 

That’s right.  I didn’t ask her to make them.  I may not be handy with tools or know how to fix my Jeep without help from friends or family but, damn it, I’m not lost in the kitchen.

 

So off I went in search of pineapple cake mix.  Four stores later I had the necessary ingredients.

 

Essentially the recipe I used is similar to the one from Dole: Mini Upside Down Pineapple Cakes.  Except screw 24 tiny ones.  Who wants that?  So I busted out the BIG muffin pan and went to town.

I did have some issues with the topping.  Next time I need to let the brown sugar cook in the pan a little longer so that it liquefies a bit more than I let it.  I was also expecting the batter to rise a bit more than it did, so I ended up with 17 cupcakes.  I think that by cutting the pineapple rings into chunks and dropping those into the topping mix will allow for the batter to even out.  The whole rings kind of act like a barrier and makes the tops a bit lopsided.

 

Thankfully I was smart enough to get enough of the necessary ingredients for a second trail.  Hopefully the results will be as pleasing to the eye as these are to the belly.  I’ve got 2 weeks to nail down the method before I can hand deliver some to Katie in Vegas.
